<Caroline> 20 of my friends are coming.
<Carrie> I think this guy is sick.
[mixer whirring] ♪ [banging] So she needs to go to the dentist before she can get her retainer?
I am getting ready to start cooking with mom.
♪ <John> My recipe calls for more alcohol.
[sizzling] <Callie> Did you put the vanilla in?
<Carrie> Yep.
Caroline just called me from work to say that her car got booted.
<Amy> At this moment we're out of traditional and fiery pimento cheese.
<John> and there's not a whole... <Carrie> Does anybody know where the stepladder is?
<John> Sorry, I'm trying to shoot a TV show here.
<Carrie> Sorry.
♪ <Carrie> I took my mom's best recipe and started selling handmade Southern biscuits.
♪ Now I'm balancing a family, a business and biscuits every day.

♪ All right, oh good we can park right there.
Oh, it's busy.
♪ Good morning.

Our girls were in your wedding.
<Shakima> They were.
My three flower girls.
<Carrie> And now she is running this store, which is... gives me lots of, ahhh <Shakima> Comfort and ease.
<Carrie> Comfort and ease.
That's right.
And your decorations are amazing.

Welcome to Hot Little Biscuit.
<Customers> Thank you.
<Carrie> How you doing?
Good morning.
Merry Christmas.
♪ <Customer> Can we do two cinnamon biscuits and then one gingerbread biscuit?
♪ <Carrie> Give us just a few minutes and we'll call your name.
Okay?
<Customer> Okay.
<Carrie> Thanks, y'all.
♪ <Caroline> Tomorrow, we are having a Christmas party.
20 of my friends are coming.
Including me, it's 21 teenagers.
<Carrie> When you finish I want you to hang them on the tree and then before your guests leave, they can take that as their parting gift, and then they'll always remember your Christmas party.
[silence] <Carrie> Hi Shorty.
[silence] <Caroline> These are cloves and they smell really good when you put them in the orange.
You just stab the orange with a toothpick and then take the little pointy part of the clove, and stick it in and then you can do all these different designs with it.
<Carrie> Oh, I love that.
<Cate> What did she do?
<Carrie> How She Rolls.
♪ This is one of our Christmas traditions.
Today, we are making ...sugared fruit, which is a great thing to do with maybe too brown or too old to eat fruit.
It requires fruit, egg whites and sugar, and I like to use gloves, but you don't have to use gloves.
<Cate> They won't fit over my nails.
<Carrie> Oh gosh.
Are you kidding?
The nails are horrendous.
Oh, and you've already broken one?
<Cate> I broke two.
<Carrie> This is like a big bone of contention in my house.
I like short nails.
I think those are dirt catchers.
Germ keepers.
You just start by rolling it in the... Biscuit, that's enough.
She thinks this is food.
You don't want to eat this though.
And then a little snow.
Fruit with stems make it a lot easier.
Grapes are really good.
Now, see, you don't have enough sugar on here.
You gotta sprinkle a little and then you want to shake a little.
It will preserve and then it can stay for weeks as your centerpiece.
One second, I got to take this call from the orthodontist and I hope everything's okay.
<Sarah> Kelly wants to talk to you.
<Carrie> Okay, let me talk to somebody at the office, because I'm in the middle of filming so is everything medically okay with you?
<Sarah> Everything is medically okay.
But dentally everything is not okay.
<Carrie> Okay, can I please speak to someone?
<Cate> Ohhhh.
She's in trouble.
[laughter] ♪ <Carrie> I am thinking that there's been lack of brushing going on.
Your teeth if... you did not brush those teeth today.
There's no way.
<Cate> She doesn't have toothpaste.
<Carrie> Okay, well, I...listen at 13, I should not have to be changing your diapers or telling you and monitoring teeth brushing.
<Orthodontist> Hey, I'm sorry for the hold, this is Julie.
How can I help you?
<Carrie> Hi, I'm just trying to um.
I'm on hold.
I'm Sarah Morey's mom.

♪ Grand.
It probably will be a grand.
♪ <Amy> Once December hits, it's crazy town.
♪ Today is our very last shipping day for regular shipping.
So we usually have about 30 to 100 online orders average a day.
Yesterday was 1400 orders so the volume is absolutely overwhelming.
I mean, it would bring you to tears, if you had time to sit down and cry.
♪ frantic music ♪ >> It's my fourth year here during the holidays.
So I've just learned to shop early.
Shop online.
[Producer off camera] <Owen> A PlayStation 5.
<Kelly> Anything else.
<Amy> Over the holidays, the bakers have always stepped up their game and kept the packers happy, tried to keep everybody's spirits up.
We always have two or three bakers that really have to show their skills.
<Hannah> The Christmas cookies that I have here are called Kolaczki.
They are a traditional Polish recipe, my husband's side of the family, they're all Polish.
There are three basic ingredients for the dough.
It's just cream cheese, butter, and flour.
The fruit filling, I used strawberry preserves and apricot preserves, and no sugar, or anything like that all the sweetness comes from the filling and the powdered sugar that's on top.
<Josh> This is a recipe passed down from my grandmother.
These are your classic sugar cookies, but then I put an edible image with our work logo, and then I made a reef out of extra icing around that.
♪ <Annalyle> I have made moldy mice.
These are little puffs of yummy sugary deliciousness with pecans in them or pecans, whichever way you prefer to pronounce it.
After they cook you take them right out quick.
You put them in powdered sugar, put them on a tray.
Come back around about a minute later and do it again.
Owen, come here, buddy.
I want you to try one of my cookies.
You see!
Look they have sugar on them.
I think you're going to like them.
I say just go for it.
Take a little bite.
Which one do you want?
<Owen> Well, the thing is, I don't really like the pecans that much.
<Annalyle> Oh you don't like pecans?
Well you just, even, well they're so ground up you can barely even see them.
You think maybe you'll just try a little bite for me?
I'll give you $5.
<Owen> No.
I have enough money.
<Annalyle> Okay.
You're... you're rich.
Okay, good for you.
<Carrie> When are you going to love shrimp?
<Cate> Never.
<Carrie> Never?
Oh, I think our water is boiling.
[pots clanging] You could also roast these which actually would probably make the flavor even better.
They're cute little things.
I am going to just let these shrimp cool enough so that they don't wilt the herbs, and then we're going to add sliced lemons, really good olive oil, a bunch of white onions, dill and flat parsley, and about eight cloves of garlic cut in half, capers, crushed red pepper, celery seed and bay leaves.
Mix that with water and then just let it sit.
<Cate> How long does it sit?
<Carrie> Overnight.
It'll get better and better the longer it sits.
♪ Slow Jingle Bells instrumental ♪ [birds chirping] <Carrie> So we're throwing a Christmas party today.
Caroline's supposed to be home to prep for the party that we're throwing for her friends.
And she just called me from work to say that her car got booted and that it's our fault.
So, uh, I just told her to call Amy.
[laughs] <Amy> Your daughter just called me.
Her car is getting towed or...had the boot.
If they're already coming to undo the boot.
I don't have enough time to get that into motion.
<Carrie> Okay, tell me about pimento cheese and the fulfillment, are we going to run out?
<Amy> Yeah, we're 100% going to run out.
I can't give you exact numbers probably till the end of the day.
I just did put out all packages with regular pimento cheese and a disclaimer.
They can have anything they want if they want to substitute fiery pimento cheese, we just don't have traditional pimento cheese.
<Carrie> And we increased by what, 25%?
Those are the projections or 30?
<Amy> I think we increased by 40%.
<Amy> Is that not insane?
<Carrie> Stop.
<Carrie> It's just hard with the pimento cheese because it's fresh.
So I don't know how we would have solved that problem.
<Amy> So we'll have all hands on deck about 2pm today.
We'll have a better idea.
There are 700 orders going out from bakery with pimento cheese in it.
With everybody being off on Friday, I have no problem working people 10 to 12 hour days on Monday, Tuesday, Wednesday, especially the week of Christmas, so it is what it is.
♪ <Caroline> I saw this big ugly orange piece of paper taped to my car.
The pass that they gave me, that I've been using for the past three years is apparently invalid now, because two weeks ago they changed the pass you needed to have and nobody informed me of that so.
♪ <Cate> Wait, so, butter, sugar.
Do I put the sugar in there?
<Carrie> I don't have the recipe.
I haven't read it.
I read recipes.
Where's the thing?
We've tried a million chocolate chip cookie recipes and Toll House knows how to do it.
Even Callie uses the Toll House.
[mixer whirring] Old Bessie.
She's like rahow, rahow.
Look at her.
[mixer whirring] I think this guy is sick.
<Cate> We need a new one.
Can we get... <Carrie> We don't need a new one every time something breaks you're like, "We need a new one."
[mixer whirring] ♪ <Cate> I thought you didn't like dough.
<Carrie> Everybody likes dough.
♪ What's not to love.
♪ Yum.
All right, you do a tray and I'll do a tray.
How's that?
I like little cookies.
Do you like little or big?
<Cate> I like big.
♪ I'm messy.
I don't care.
If I'm messy or not, she likes to be neat and perfect.
<Carrie> I don't like to be neat and perfect.
I just don't like things on my hands.
I'm weird about having things on my hands.
<Cate> Your living is making biscuits by hand.
<Carrie> Good point.
<Cate> Like, What?
<Carrie> Noted.
Noted.
That's different.
I don't know why.
How long would you like yours done?
<Cate> Um, say 15 minutes first.
<Carrie> Oh, you don't want to turn the pan halfway through?
<Cate> No.
That's just, <Carrie> Oh.
She's just going rogue.
Let me answer, Caroline.
<Carrie> Hello.
<Caroline> Can you bring me a hammer please?
<Carrie> A hammer.
<Cate> Why?
<Carrie> Oh look, she's hanging them.

I thought your dad was going to help you.
♪ Is there a way to make it higher in the center... <Caroline> No.
<Carrie> So, they're not so low?
I bet you can.
<Caroline> I can literally, cannot reach that.
<Carrie> I know but dad can.
and you put them two in the center <Carrie> Okay.
Okay.
All right.
[banging] [laughs] ♪ ♪ [timer beeping] <Carrie> Ah they're so crisp.
♪ Well, not really.
Mmm.
♪ [traffic sounds] <Tarah> We have crazy deadlines this week.
So I just want to double check what campaigns you have going out today and tomorrow since it is the last chance to ship anything for Christmas.
>> Let's see.
We have bubbles and biscuits going out which I think will do really well.
<Tarah> That'll be great because Carrie's tradition of Country Ham biscuits and champagne is... <Meghan> Yes.
<Tarah> Going to be great... <Meghan> ...we really highlight it here.
So, our big one is Country Ham Biscuits.
<Tarah> Looks great.
♪ <Carrie> You know when I think about, when I think about going back 16 years is... We started a biscuit business with Country Ham, and most people didn't even know what Country Ham was.
That just tells me if you want something bad enough, you can do anything.
[laughs] The reason we're making them today is because this is when they really got their start at the Christmas eve party that you always threw, and my friends would come over and then call you and say, can we buy 200?
Can we buy 500?
We get a lot of people that order them and they say, "Why is the ham chopped?"
and we have to explain.
<Callie> Country ham, there's some chew to it, in the food world things evolve, and it evolved to me going one day, "Ah, I'm going to try to chip this up, "and then wouldn't it be good with mustard "and butter?"
<Carrie> There are a lot of things that have changed about this business, but the one thing that hasn't changed is we still make the biscuits... <Callie> The basic way.
<Carrie> The exact same way.
♪ We're going to get about 100 biscuits out of this.
Do you think that's enough for the... <Callie> 30 people.
That gives people <Carrie>...30 people?
three biscuits.
Yes.
Very wet dough and this is a messy job.
<Carrie> Watch out, mom.
<Callie> Inside here is just wet and <Carrie> - moist and that's what gets... <Callie> Good wetness.
.<Carrie> ...you really good down pillow like biscuits.
♪ <Callie> And the trick here is to get them as close together as you can.
♪ The butter strategy is lots of butter.
So they're little puddles of butter all in between these biscuits.
♪ <Carrie> I have the oven preheated to 425, and I'll put them in for eight to 10 minutes and then turn the trays in another eight to 10 minutes.
16 to 20 minutes total bake time.
♪ [Carrie on phone] Hey.
[Amy on phone] Hey.
<Carrie> Are there concerns about shipping and things getting there on time with us pushing it to Wednesday and...?
<Amy> I'm worried about the orders that are going today express and then getting there, um, by Friday.
And the further we push back such, such as pushing back to tomorrow, or even getting out orders that come in today for tomorrow, that makes me nervous, but when everything is settled down, I will know better numbers if we have any pimento cheese to work with tomorrow if we have... because we're not stopping to count at this point.
It's just pack, pack, pack.
<Carrie> Okay.

<Carrie> Okay, bye.
<Amy> Okay, bye.
[phone drops on table] <Amy> I always want after Christmas at Callie's, a night away at a hotel with a spa treatment and no one to call me, text me with any fires to put out.
♪ <Carrie> The biscuits are out of the oven, they've cooled.
And so now we are cutting them, to open them up like a sandwich and mom is putting a Dijon mustard butter in the center.
<Callie> Half and half.
[knife drops on table] <Callie> Oh, was that a secret?
<Carrie> Not anymore.
[laughs] So, this is the country ham that we've always used, and this is what we mean by chipping it.
So, we have a machine now but we used to do this by hand which was incredibly difficult.
♪ And that is how the biscuit business was born.
♪ <Carrie> How pretty is that?
I did for the kids like a sparkling cider with a little cranberry and sugared rims to make it festive, then... <Callie> What's for the adults?
<Carrie> John is making his eggnog.
<Callie> Oh my gosh.
<Carrie> Potent.
[game audio] <John> I'm watching the University of Wyoming play Kent State in the potato...
I don't know what the bowl is, potato, oh the famous Idaho potato bowl.
♪ In a large bowl, we put our egg yolks.
Where's my vanilla?
I'm assuming that's this.
♪ My cinnamon.
I'm assuming that's this.
All spice... that's definitely that.
Salt.
♪ That's salt.
[game audio] Oh, come on.
I went to the University of Wyoming.
I walked on and played football a little bit.
And there's not a whole lot of people from Wyoming and there's not a whole... <Carrie> Does anybody know where the stepladder is?
<John> I'm Sorry, I'm trying to shoot a TV show here.
<Carrie> Sorry.
Stepladder anybody?
♪ <John> Well, here's the deal is, I use more rum and bourbon.
So I'm trying to figure out what the right... level is here.
♪ Half a cup of the sugar.
That seems like way more than a half a cup of sugar.
Whisk...it all nice and mix together.
♪ This looks like a lot of, um, bourbon and rum.
<Carrie> She doubled it.
<John> Use my stand mixer, beat my eggs.
Gradually adding the remaining half cup of sugar.
Oh, that's why there was so much sugar.
[whisking] Cool!
Now we do this.
What a lot of people may not know is eggnog is actually kind of two things at once.
Really making kind of two different batches of the eggs, one with the whites and one with the yolks, and then slowly fold it in and then you get a nice, it kind of rises.
It's fluffy - Are you saying I'm wrong?
<Carrie> I have no idea.
I'm not an eggnog expert.
I'm just really enjoying this instruction.
<John> Yeah, yeah, it's first time anybody's listened to me.
[mixer whirring] Ha ha!
They missed their field goal.
[mixer whirring] I'd say it's at least doubled in volume.
[mixer whirring] Now, we'll fold in.
Oh, this is going to be a good batch.
I can already tell.
Oh, Wyoming scored.
So it's 17-14 Somehow I've missed that.
Slowly add milk and heavy cream, and then the best part's the bourbon and the rum.
Most people when they make eggnog, do it only with rum.
I like also having the bourbon in there.
It adds maybe more depth of flavor.
Ahhh!
Touchdown pokes.
♪ Ahhh!
Yeah, that's a good batch.
♪ <Carrie> Thank you.
Merry Christmas.
<John> I think it's six o'clock.
Wyoming is up 25-24.
The nog is getting ready to come out.
It's quarter past a cocktail so I gotta get to it.
♪ <Amy> Hi!
<Carrie> Hi.
Oh my gosh.
I'm so behind.
<Amy> We kind of ran out of pimento cheese.
<Carrie> And we already have orders for it?
So we are... <Amy> We have 105 orders and more are coming in.
So... <Carrie> I know, it's like they aren't stopping.
It's insane.
<Amy> I'm kind of scrambling.
<Carrie> You need to show Amy to the eggnog.
I still have on leggings.
<Amy> Don't.
Do not show me to the eggnog.
<Cate> Mom, there's like none in this.
<Amy> Show me to the...beer.
[laughs] ♪ Christmas music ♪ ♪ <Caroline> This party is just a gathering with all my friends for Christmas.
We're celebrating.
We're eating.
[Producer off camera] Is that good?
<Caroline> I'm really excited.
<Carrie> I'm going to go slow and I'm only going to give you three at a time.
Look at how beautiful y'all are.
I love it.
♪ <Caroline> It's a very high stress environment.
It's a bunch of teenagers so, but it's been great.
It's fun.
♪ <Carrie> Can I get anybody soup?
<Caroline's Friend> Every Sunday night, I text Caroline I know you're having a home cooked meal.
Can you please bring me leftovers to school I need them.
<Carrie> And we have tomato soup with little cheesy toast, so.
<Caroline's Friends> Thank you.
<Caroline's Friend> Thank you.
♪ [Amy on phone] We are going to make enough to get the orders that are in the portal that are going out tomorrow.
♪ <Caroline> We love tradition in our family, and this is something that they did in the past so it's great for me to continue the tradition <Caroline's Friend> Big fans.
